tri-coloured quinoa salad

what you'll need:

for the salad: 

  • 1 cup cooked quinoa
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots 
  • 2 mini cucumbers diced
  • 1 gala apple diced
  • 1 avocado peeled and cubed
  • 1 cup of cherry tomatoes halved
  • 1/4 cup cilantro chopped 
  • salt & pepper to taste

for the dressing:

  • juice of 1 lemon
  • juice of 1 lime
  • juice of one orange
  • 1 teaspoon dijon mustard
  • 1 tablespoons raw honey
  • 1 tablespoon raw apple cider vinegar
  • ΒΌ cup extra virgin olive oil
  • salt & pepper to taste

the steps:

  • Cook quinoa to package directions. Place in the refrigerator to cool.
  • In a small mixing bowl combine all ingredients for the dressing & whisk to combine.
  • In a large mixing bowl combine all ingredients for the salad. Stir to combine.
  • Pour the dressing over the salad, and toss to evenly coat
  • Store in a the fridge until ready to serve.
  • Leftovers? Place in an airtight glass container for 1 week.
