Summer Salmon Salad

serves 2

what you'll need:

the salad:

  • 2 cups of arugula 
  • 1 cup baby kale
  • 1 mango cubed 
  • 7 oz. salmon sashimi 
  • 3 tbsp pistachios 
  • 1 tbsp black chia seeds
  • 1 tbsp flax seed
  • 1 tbsp sunflower seeds
  • 1 tbsp hemp hearts

the dressing: 

  • 2 tbsp olive oil
  • juice of 1/2 fresh lime 
  • 1 tbsp white wine vinegar
  • 1 tsp wholegrain mustard
  • 1 tsp honey
  • salt & pepper, to tast

the steps:

  1. In a small bowl whisk together all of the salad dressing ingredients. Place in the refrigerator to chill.
  2. In a medium salad bowl mix together arugula & kale.
  3. Top the green mixture with mango & salmon, & sprinkle with pistachios, black chia seeds, flax seeds, sunflower seeds & hemp hearts. 
  4. Top the salad with chilled dressing & serve.
