Summer Salmon Salad
serves 2
what you'll need:
the salad:
- 2 cups of arugula
- 1 cup baby kale
- 1 mango cubed
- 7 oz. salmon sashimi
- 3 tbsp pistachios
- 1 tbsp black chia seeds
- 1 tbsp flax seed
- 1 tbsp sunflower seeds
- 1 tbsp hemp hearts
the dressing:
- 2 tbsp olive oil
- juice of 1/2 fresh lime
- 1 tbsp white wine vinegar
- 1 tsp wholegrain mustard
- 1 tsp honey
- salt & pepper, to tast
the steps:
- In a small bowl whisk together all of the salad dressing ingredients. Place in the refrigerator to chill.
- In a medium salad bowl mix together arugula & kale.
- Top the green mixture with mango & salmon, & sprinkle with pistachios, black chia seeds, flax seeds, sunflower seeds & hemp hearts.
- Top the salad with chilled dressing & serve.
