Carrot Cake Blender Doughnuts

Doughnuts. They're something so many of us LOVE but so many of us avoid because let's be honest, deep fried dough, it's not the healthiest option out there. But what if I could change that, & told you that you can enjoy a doughnut everyday of the week (no guilt to be had!). I'm serious guys, these are what I call blender doughnuts! Made from entirely whole ingredients, they're baked not fried, & iced with a light cream cheese frosting (that might have you licking the bowl). 

The blender is SUCH a versatile kitchen appliance! I often use mine for smoothies, soups, raw cakes, vegetable purees, muffins ... but never doughnuts! I've been MAJORLY missing out on some seriously good eats, friends! SO, with that said, I give you these blender doughnuts, pure MAGIC!


carrot cake batter

what you'll need:

  • 1 cup spelt flour
  • 2 eggs
  • 3 tbsp raw honey
  • 3 tbsp coconut oil
  • 1/2 tsp baking soda
  • 1/2 tsp baking power
  • 3/4 cup almond milk
  • 1 cup shredded raw carrot
  • 1 tsp natural vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup raisins 
  • walnut pieces (option)

the steps:

  1. Preheat the oven to 350.
  2. Spray your doughnut pan with coconut oil.
  3. Add all ingredients, except for the raisins, into a high speed blender. Blend until well combined.
  4. Fold in the raisins.
  5. Pour batter into doughnut pan, filling them about 3/4 of the way. Top with extra raisins & walnuts, if you wish.
  6. Bake for 12-15 minutes, or until doughnuts are golden around the edges and spring back when touched.
  7. Remove from oven & cool.

Frosting 

what you'll need:

  • 1 cup raw cashews soaked overnight in warm water
  • 1/2 cup coconut cream (refrigerated over night) 
  • 1 tablespoons maple syrup
  • 1 tsp natural vanilla extract

the steps:

  1. Add all ingredients in to a high speed blender and blend until smooth.
  2. Spread on top of chilled doughnuts (& be sure to lick the blender clean)
