Blueberry Pie Bliss Balls


Hey cutie pie, are you craving a slice of berry delicious blueberry pie? Same ... But it's Monday and I have a filling you may need a wellth approved alternative! Well, here it is! These little bites are a delicious alternative to buttery sugary pie, exactly what you may need to satisfy your sweet tooth without the indulgent anti-nutritious ingredients.

what you'll need:

  • 6 pitted medjool dates

  • 1 cup raw cashews

  • 1/2 cup unsweetened coconut 

  • 1 tsp vanilla extract

  • 1/2 cup dried blueberries

the steps: 

  1. Add all ingredients, excepts for the dried blueberries, to a high speed food processor. Pulse until well incorporated and the mixture sticks together when pinched. If the mixture crumbles, don't stress! Add dried blueberries and pulse until they become slightly blended, but there are still some chunks. Test the mixture again! Does it stick when pinched? If yes, roll the mixture into bite sized balls. If you need a little more moisture, add 1 tbsp of coconut oil & then roll in to balls. 

  2. Store in an air tight glass container in the fridge or freezer!
