Birthday CAKE batter bliss balls

Who says it has to be your birthday for you to enjoy a birthday cake batter bliss ball?? Not me! 

I wanted to create a simple recipe that mimics the flavour of traditional birthday cake, without the added sugar & simple carbohydrates. I dressed these baby's up with rainbow sprinkles (what's cake without sprinkles?). Now, I know not everybody is a vanilla lover (umm can you say basic). So, to satisfy those who like their desserts a little more decadent, you'll notice an optional ingredient, raw cacao (you're welcome).


what you'll need: 

  • 1 cup almonds (peeled)

  • 1 cup raw cashews

  • 1 cup pitted medjool dates

  • 1/2 unsweetened shredded coconut

  • 2 scoop collagen peptides 

  • 1 tbsp coconut oil

  • 1 tsp natural vanilla extract

  • pinch of sea salt

  • rainbow sprinkles

  • 1 tbsp raw cacao (option)

the steps:

  1. in a food processor pulse together almonds, cashews, coconut, & collagen until you achieve a corse consistency.

  2. add the dates, salt, vanilla & coconut oil. Pule until just combined.

  3. firmly press 1 tbsp. of the dough into balls, then roll in reserved rainbow sprinkles, pressing slightly to adhere. place in the freezer on a plate or flat surface to firm, for about 20 minutes.

  4. store in an airtight glass container in the fridge for up to 7 days or in the freezer for a month; make large batches to store snacks ahead of time.

Do you find yourself craving sweet, sugary, processed foods in the morning? I get it, pancakes, waffles & cereal sounds so much better than grilled vegetables paired with a tofu scramble (although i'd prefer the latter). But if a savoury breakfast doesn't get you jumping out of bed in the morning, I have the solution for you. But why should you give up the morning favourite?

three ugly truths about cereal, drop the spoon:

  1. Most cereal makers use genetically modified organisms or GMOs to boost crop production ($$$). What's so bad about GMO's? GMO's have been shown to cause allergies, digestive problems,  liver problems, & infertility.  

  2. Many breakfast cereals are produced via extrusion, a high-temperature process that uses a machine to shape the cereal into uniform shapes & sizes (who's a sucker for cute little o's & stars?). During this process, much of the nutrients are destroyed & denatured, making them useless to our bodies.  

  3. Many of our favourite breakfast cereals are fortified or enriched with vitamins and minerals, meaning that a nutrient(s) has been added back to the food because during manufacturing it was removed, or it was never naturally present. These synthetic 'nutrients' your body cannot absorb & are eliminated.

There is no substitute for real food, but no one wants to give up the things that make them happy, & that includes CEREAL! to make these bliss balls into a raw cereal, roll the batter into smaller bite sized balls, pour over with a homemade nut milk, add in some organic fruit. taa-daaaa, you've got a delicious nutrient dense breakfast cereal containing nutrients that the body can easily recognize because they are in their natural state and therefore, you can easily digest and absorb.
