Chocolate Chip Cookie Dough Energy Bites
doughy & delicious. These are dangerously addictive! These chocolate chip cookie dough energy bites are made from wellth approved whole food ingredients, making them a better alternative than pre-packaged treats & basically guilt free ... right?
Ok, i'm late posting this so i'm going to cut it short!
what you'll need:
1 cup cashew butter
1/2 cup unsweetened coconut
8 medjool dates, pitted
1 tsp vanilla extract
1 1/2 cups quick rolled oats
3/4 cup dairy free mini chocolate chips
soak the dates in hot water for approximately 10 minutes. This will soften them and make the bites extra chewy, moist & doughy! Drain the water & add the dates to a high speed food processor.
To the dates, add cashew butter, coconut, oats and vanilla extract. Pulse on high until you achieve a fine meal like consistency. Pulse less or more until you achieve a 'dough' like consistency that sticks together when it is pinched. If your dough crumbles you could add 1 tbsp of honey or 1 tbsp coconut oil. Alternatively, you could add a touch of water. Remember, less is more so start slow!
Once you achieve the desired consistency, stir in the chocolate chips.
roll into balls of whatever size you would like (mine were about 1″ in diameter). Store in a glass container and keep refrigerated for up to 1 week or freeze for up to 3 months ... if they last that long!
Makes about 20-25 balls.
