Chocolate PB Cereal Bars

cereal, chocolate & PB ... it doesn't get much better than that combo (am i right?!). These are a wellthy spin on the classic puffed wheat square, making them a totally acceptable 'treat' to enjoy on the regular! This recipe can be adapted for those who have allergies to specific ingredients (hello intolerance friendly)! Can't do PB? No worries, swap it out for almond butter or a delicious hazelnut butter! Not fan of dark chocolate? Milk chocolate will do the trick! Love coconut? sprinkle some on top! You get the idea, the option are endless, so make them your own! Oh, & I challenge you not to eat the entire tray in 2 days (... guilty)! 


what you'll need:

  • 5 cups kamut puff cereal

  • 1 cacao bar (100g)

  • 2 tbsp coconut oil

  • 2 tbsp honey

  • 1/2 cup pb

  • pinch of salt

the steps:

  1. Line a square (9 inch) cake pan with parchment paper. 

  2. In a medium sized bowl, measure out the cereal & set aside.

  3. Over a double boiler, melt the bar of dark chocolate. Mix in remaining ingredients, stirring consistently until smooth.

  4. Pour the chocolate PB mixture over the cereal & stir until the cereal is evenly covered. 

  5. Pour mixture in the lined cake pan & place in the refrigerator for a minimum of 20 minutes, allowing the cereal bars to cool & harden.

  6. Slice in the desired sized bars & enjoy! 

Enjoy these bars on their own, or with a side of yogurt, fruit, you could even break them in to smaller pieces to top a smoothie!
