Chocolate PB Quinoa Puffs
While I love doing my grocery shopping online (where are my Spud fans at?) I do LOVE wandering the isles of grocery stores, checking out new & exciting product or produce that's unfamiliar to me. Yes, some of the exotic foods have me pulling out my phone & googling how to use XXX, but hey, that's part of the fun & creativity that I love when it comes to testing new recipes to share with you guys. While I spend most of my time shopping the perimeter of the store (that's where the unrefined whole foods hangout), I have to admit, I have an obsession for strolling though the isles, scouting out new packaged foods, reading labels & ingredient lists (it's like a hobby). Some of my favourite local grocery stores (Blush Lane & Amaranth) are constantly bringing in new foods, some local some not so local, that I can't not put in my cart (I do it for you guys ... or that’s what I tell myself). Whether it's probiotic granola, cricket powder protein bars, charcoal ice cream or nut based cheese, it gets me all giddy when I find something that's new to the market (or to Calgary) & has a wellthy ingredient list!
Recently I came across quinoa puffs. I know most of you reading this are aware & likely use quinoa regularly as it's a high protein, gluten free, non-grain carbohydrate. It versatile earthy flavour means it can be used in breakfast recipes as a substitute for refined cereals, a component of a delicious salad bowl, or the glue that holds a plant based burger together (yum!). But what about using this versatile pseudo grain in a dessert? Well that curiosity had got me busy in the kitchen & the puff-nut was created (the quinoa puff doughnut). If you don't have a doughnut pan (you should really get one), you could easily make these in to squares or even roll them in to bite sized balls. They are just sweet enough to curb an evening craving, without the guilt of indulging in a treat that's full of simple sugars & refined ingredients, plus, who doesn't love the combination of pb & chocolate?
what you’ll need:
makes approximately 9 puff-nuts
2 cups quinoa puffs
1/2 cup natural peanut butter
1/2 cup raw honey
1 tsp cinnamon
1/2 cup melted dark chocolate
2 tsp coconut oil (or butter)
1 tbsp hemp hearts (Manitoba Harvest)
1 tbsp raw bee pollen (optional)
In a medium size bowl, stir together quinoa puffs, peanut butter & honey. Add cinnamon & combine.
Fill each doughnut mould with the puff filling. Pressing down so that the puff filling sticks together & keeps its shape. Place in the fridge to chill.
Over the stove or in a microwave safe bowl, melt chocolate. Stir in coconut oil (or butter).
Remove puff-nuts from the fridge & coat the top with melted chocolate. You could even drizzle or dip the entire puff-nut (things are getting wild).
Sprinkle with optional toppings, hemp hearts & bee pollen. Chill in the fridge for min 20 minutes, to allow chocolate to firm, then serve!
