Creamy Cashew Kabocha Pasta

This recipe features cholesterol free egg noodle by the brand NO YOLKS! I was curious to see how these compared to standard egg noodles, and i'm happy to report that they cook up firm and fluffy, maintain their shape and are a great alternative to traditional egg noodles should you have specific dietary restrictions. 

This creamy cashew squash sauce was the most delicious coating for these noodles. A light alternative to other packaged refined sauces, and it contains two vegetables (just in case you were shy on your daily servings). 

Ready to give this wellthy dish a try (I think so too).


the sauce | what you'll need: 

  • 1 medium kabocha squash, quartered and seeded

  • 1 cup cauliflower, florets 

  • 1/4 cup cashews

  • 1/2 almond or rice milk

  • 1 tsp garlic powder

  • 1 tbsp miso paste

  • salt and pepper, to taste 

the peas | what you'll need:

  • 1 cup frozen or fresh peas

  • 2 cloves of garlic, minced

  • 1 tbsp ghee 

  • salt and pepper, to taste

the base | what you'll need:

  • 1 package of no yolks noodles (broad noodles)

the steps:

  1. boil no yolks noodles according to package directions. Drain, rinse and set aside in a large bowl. 

  2. As the noodles are boiling, bring another pot of water to a boil. Add squash and cauliflower, boiling until just tender. When you can pierce the vegetables with a fork, remove from heat, drain and add to a high speed blender. 

  3. In addition to the squash and cauliflower, add cashews, almond milk, garlic powder, miso and a pinch of salt and pepper, to taste.

  4. Using a tamper, blend until smooth.  

  5. Pour sauce over the noodles, stir well to coat evenly.

  6. Warm a cast iron skillet over medium heat. Add ghee, garlic and peas. Sauté for approximately 5-7 minutes, until the garlic becomes fragrant and lightly browned. 

  7. Either stir in sautéed peas to the pasta mixture, or add a spoonful to each serving. 

  8. Plate and enjoy! 


This dish is a great alternative to pre-packaged pasta products that use powdered sauces and containing ingredients you cant pronounce. It's creamy without dairy, but if you want to make it a little cheesier, here are some wellthy additions:

optional sauce ingredients:

  • nutritional yeast 

  • mozzarella

  • cheddar

  • brie 

  • shredded chicken  

alternative to noodles:

  • zoodles

  • squash noodles 

  • quinoa

  • rice
