Creamy Cashew Kale Salad


Who doesn't love a creamy caesar salad (me me me!). & let's be honest, the more dressing the better! But when it comes to caesar dressing, it can be heavy (think parmesan cheese & buttered croutons). Sure, there's lettuce under there, but don't think that it makes up for what it's coated in. 

Yes, I do think it's alright to indulge in a dish you love from time to time (life's worth living), but why put limits on food when you can make some wellth approved swaps and eat it every damn day! 

With that in mind, I got in the kitchen and started playing around with some of my favourite wellth approved ingredients! The result? A smooth, oil free, guilt free dressing that's perfect any salad, sandwich or sauce. Oh, I forgot to mention that you don't have to soak the cashews (you're welcome)! 

Romaine calm & read on, the recipe is ready to SHARE!

What you'll need:

  • 1 cup raw cashews 

  • 1 cup water

  • juice of 1/2 lemon

  • 2 tbsp nutritional yeast

  • 1/2 tbsp Dijon mustard

  • 1/2 - 1 tsp turmeric 

  • 1 tbsp caper juice 

  • 1/2 - 1 tbsp garlic 

  • salt and pepper 

the steps: 

  1. add all ingredients into a high speed blender (I used a magic bullet) & blend until smooth. 

how to use:

  • use as a dressing for kale salad 

  • use as a spread for your favourite sandwich 

  • use as a dip for veg
