who feels like Mexican? These fiesta bowls are a great dinner option as they are completely customizable (anyone have picky eaters on their hands?), & a healthier alternative to eating mexican out on the town (oh, also budget friendly). The build your own bowl is a great way to satisfy everyones mealtime preferences without having to prepare several different dishes. It's an added bonus that you can use so many different foods in one nourish bowl & have leftovers that are easily transportable for a healthy on the go meal. So, who is ready to have a mex-cellent dinner tonight?
crispy Mexican breaded tofu cubes
what you'll need:
1 package of extra firm organic tofu
1 cup nut milk (i used almond)
1 cup almond flour
2 tbsp garlic powder
2 tbsp chilli powder
2 tbsp smoked paprika
1 tsp salt
1 tbsp coconut oil
Preheat your oven to 350.
In a bowl, combine almond flour, garlic powder, chilli powder, smoked paprika and salt. Stir so that the ingredients are well incorporated.
Remove the tofu from the packaging and pat it dry with a cloth or paper towel.
Cut the tofu into bite sized cubes. In a ziplock bag, add enough corn starch to coat the tofu. Seal the bag & toss until every piece is well coated.
Remove the tofu from the ziplock bag & dip each piece into the almond milk. Then, coat each piece in the almond flour chilli mixture. Continue doing so until all of the tofu has been breaded.
In a cast iron pan over medium heat, melt 1 tbsp of coconut oil. Once melted, add the tofu to the pan & brown both sides. This should take approximately 3 min on each side.
Transfer the cast iron pan to the oven & bake for 15-20 minutes, or until crisp & slightly firm.
Remove from the pan & add to your favourite plant based meals!
what you'll need:
1 bunch of cilantro
Juice from one lime
salt & pepper
Dice mango, avocado, tomatoes, & cilantro, & combine in a bowl. Squeeze the juice from 1 lime over the salsa & season with salt & pepper.

choose a protein: tofu, seitan, tempeh, wild salmon, organic chicken, grass-fed beef
choose a grain: quinoa, wild rice, buckwheat, teff, freekeh
choose a legume: chickpeas, black beans, lentils
choose your sides: avocado, roasted sweet potato, corn, mushrooms, pepper, dairy/dairy-free cheese, tomatoes, olives, green onion, etc.
