Pistachio Hazelnut Brownie Bars

Having health bars on hand with a good balance of carbs, protein & fats (without all the unnecessary junk), makes life a little easier when your on the go! Using dates as the base of the bar, gives them a nice natural sweetness, as well as an energy & fibre boost, perfect for a post sweat snack, or morning metabolism boost! Healthy fats, coming from nuts helps to keep you feeling satiated longer, as well as contain vitamins & minerals that help improve digestion, immunity & metabolism, as well as improve hair, skin & nails. Raw cacao powder is an antioxidant & anti-inflammatory powerhouse, which can help to elevate mood & reduce oxidative damage in the body! Lastly, collagen is a natural occurring substance in the body, but as we age, collagen production decreases. Adding collagen into your diet helps promote gut health, the growth of healthy bacteria in the gut, reduces inflammation & is a source of protein (give me that lean muscle!). These bars are SO much more than your average store bought protein bar, & with such little prep time, you can whip them up during a commercial break! 

what you'll need:

  • 9 pitted medjool dates 

  • 2 tbsp cacao powder

  • 1 tsp coffee extract (or vanilla)

  • 1/2 cup pistachios

  • 1/2 cup hazelnuts

  • 1 scoop collagen peptides (optional)

  • 1 tsp cacao nibs (optional)

  • 1/4 cup unsweetened coconut (optional)

  • goji berries (optional)

the steps:

  1. In a small bowl, soak the pitted medjool dates in hot h20 for 10 minutes. Discard the water & transfer the soaked dates to a food processor. 

  2. Add the cacao powder, coffee (or vanilla) extract, pistachios, & hazelnuts to the food processor. This is when you would add the collagen peptides, if you wish. Pulse on high until the dates achieve a smooth consistency & the nuts are roughly chopped. 

  3. Remove the blade from the food processor & stir in optional ingredients, cacao nibs, coconut, & goji berries.

  4. Line a square cake pan with parchment paper, & transfer the mixture to the pan. Spread the mixture evenly, firmly pressing down.

  5. Place in the refrigerator for up to an hour to allow the bars to take shape & cool.

  6. When ready, remove from the fridge & slice in to bars, square or rectangle! 

  7. Store in a glass container in the fridge for up to 1 week or in the freezer for up to 3 months.
