Tofu Kale, Mushroom & Leek Quiche


While I don't label my diet (ugh ridged food rules, no thanks), I do eat primarily plant based. If you're trying to reduce your consumption of animal protein or incorporate some more meatless meals into your day, this eggless quiche may be a nice little switch up! 

I made this for a Mother's Day brunch, along with a fresh fruit platter & of course avocado toast ... Is any brunch complete without avocado toast? I think not! 

You don't need a special occasion to whip this up! Make it at the beginning of the week, slice it up & have it ready to go for the week! Meal prep done! You could even use a muffin tin to make cute little tofu quiche bites (think egg bites without the eggs)!

what you'll need

for the tofu

  • 1 package of extra-firm tofu

  • handful of fresh Italian parsley

  • handful of fresh dill

  • 1/4 cup plant milk

  • salt & pepper, to taste

for the vegetables

  • 1 tbsp coconut oil

  • 3 kale leaves, de-steamed, rinsed and finely chopped

  • 1/2 cup leek, rinsed and chopped

  • 1/2 cup mushrooms, sliced

  • 1/4 purple onion, diced

  • 2 cloves of garlic, minced

  • salt & pepper, to taste

the steps

  1. Preheat oven to 375 degrees F. Lightly spritz a 9.5-inch oven proof dish with non-stick spray.

  2. Warm a cast iron skillet over medium high heat. Add coconut oil along with garlic, onion, leek & mushroom. Sauté until vegetables become tender and slightly golden brown. After about 5-7 minutes, stir in kale and remove from the heat. Transfer to a bowl.

  3. Meanwhile, prepare the tofu. Roughly chop the tofu & add it to a high speed blender along with plant milk, herbs, salt & pepper. Blend until smooth. Be patient, you may have to use a tamper. 

  4. Add the tofu to the bowl with the vegetables and fold together to incorporate.  

  5. Transfer to the baking dish.

  6. Bake quiche for 30–40 minutes or until then top appears golden brown and firm. 

  7. Let cool briefly, and then serve with fresh herbs, green onion & sliced avocado.
