I've been holding out on you guys for a little while now, but in the spirit of Christmas, I have a gift for you! What could it be? The recipe for these wellthy twi-ckers bars (it's about damn time, am i right!)

 but first, what's a twi-ckers bar?

It's exactly what it sounds like, a mix between a twix and skickers bar (so you get the best of both worlds in one bar). The base is a buttery crust (hold the butter), the filling is a gooey caramel (hold the sugar), the outer shell a perfectly crisp chocolate coating (hold the dairy).

THE RECIPE!

 


THE CRUST

what you'll need:

  • 1 cup almond flour

  • 2 tbsp maple syrup (or honey)

  • 1 tbsp coconut oil

  • Pinch Himalayan salt

the steps:

  1. add all ingredients in to a high speed food processor and pulse until you achieve a slightly crumbly consistency. The base batter should hold its shape when pressed between two fingers. Press into the bottom of a parchment lined loaf pan. Place in the freezer to chill. 

THE CARMEL FILLING

what you'll need:

  • 8 pitted Medjool dates

  • 2 tablespoons melted coconut oil

  • 1/4 cup cashew butter

  • 3 tablespoons water

  • 1 tsp vanilla extract

  • Pinch Himalayan salt

  • 1/4 cup chopped peanuts (optional)

the steps:

  1. soak the dates in warm water for 10 minutes (do not discard the soaking water). Add all ingredients except the peanuts in to a high speed food processor. Pulse until smooth, thick and caramely (ohhh baby!). stir in the chopped peanuts (to give it a nice nutty crunch). Remove the crust from the freezer, spread the filling evenly onto the base and place back in the freezer until solid, approximately 2 hours.

the chocolate shell

what you'll need:

  • 1/4 cup cacao powder

  • 1/4 cup coconut oil

  • 1-2 tbsp maple syrup

  • Pinch Himalayan salt

 

    the steps:

    1. melt coconut oil over the stovetop or microwave. Stir in chocolate cocoa powder and maple syrup. Remove the twi-ckers from the freezer and pour chocolate over the caramel filling.  Sprinkle with salt and place back in the freezer to harden, approximately 5 min. Alternatively you could slice the bars and dip the entire bar in chocolate to get an even chocolate coating.

     

    Finally, remove from the freezer, slice and enjoy!
