Zesty Green Bean Salad

Undress your salad! Yes, that's right, we are stripping it back to basics. It's all about highlighting those fresh garden ingredients that you've either grown yourself or picked up from the local farmers market! Showcase the colour, texture and smell of your ingredients by pairing them with a light aromatic dressing that enhance the flavour & nutrient density of the meal.

what you'll need:

  • green beans
  • 1 navel orange
  • 1 lime
  • 1 lemon
  • pistachios 
  • cold pressed olive oil
  • salt & pepper

the steps:

  1. In a medium sized pot bring h2o to a boil. Add the green beans & simmer until tender. Remove from heat & immediately place them into an ice bath. 
  2. Once cooled, wrap the beans in paper towel to dry, place to the side. 
  3. In a small mixing bowl, squeeze the juice of half the lemon, lime & orange. Add 2 tbsp of cold pressed olive oil to the citrus juices, along with a pinch of salt & fresh cracked black pepper, Stir to combine. 
  4. Plate your bean onto a serving dish & pour over the citrus dressing. Top with pistachios & serve.
