Zesty Lemon Poppy Seed Bliss Balls
When life gives you lemons, add some cashews, dates & a few other wellthy ingredients, & make yourself some bliss balls! These are a DELICIOUS & refreshing snack, perfect for welcoming spring & summer! Putting a raw spin on the classic lemon poppy seed muffin, these can be enjoyed without worrying about added sugar, refined carbs & fat content (or potential muffin-top, rejoice!).

Craving a cool treat or want to extend the shelf life of your bliss balls? Pop them into a glass container & store in the freezer. They'll last you up to a month (if you can resist) & are absolutely delicious chilled!
what you’ll need:
1 cup walnuts
1 cup cashews
6 medjool dates
1 tsp vanilla
zest & juice of 1 lemon
1/2 cup coconut
1 tbsp coconut oil
1 scoop collagen peptides (optional)
pinch of sea salt
1 tbsp poppy seeds
IN A FOOD PROCESSOR PULSE TOGETHER all ingredients, except poppy seeds, until you a achieve a fine CONSISTENCY.
remove from food processor & stir in poppy seeds.
FIRMLY PRESS 1 TBSP. OF THE DOUGH INTO BALLS. PLACE IN THE fridge TO FIRM, FOR ABOUT 20 MINUTES.
STORE IN AN AIRTIGHT GLASS CONTAINER IN THE FRIDGE FOR UP TO 7 DAYS OR IN THE FREEZER FOR A MONTH; MAKE LARGE BATCHES TO STORE & have snacks ready for life on the go!
